"Art" is whatever appeals to an individual's thoughts and emotions moving them to think in a way they hadn't before or to see something differently.

I love detail and work hard to show you what it is that I see when I look at an object or the face of an animal or child. Likeness may be important in some instances but as an individual artist sees it, the subject may appear quite differently. That's why we call it art!
